If photos are the main thing you want secured, make sure they don't show in your Photoroll. To do this on iPhone select "settings" then "Privacy" followed by "Photos." Now deselect WhatsApp from the list of apps whose images are placed into your phone's photostream.

If you have an Android device and you want to make sure your images aren't fed into the photoroll, you'll need to download an app. Something like ES File Explorer will do the trick. Use this to find the files the photos are stored in. Now create a file within the photos folder called ".nomedia". This will automatically stop the device from downloading the images to photoroll.

If you activate WhatsApp with the same phone number on a different phone using a replacement SIM, the chats held on the old stolen or lost phone will be removed. If you can't do this, you'll need to get in touch with WhatsApp to get the account stopped.
